NOT A SHIP
So, we all know those moments of Shinobu and Giyuu during the series but what if I tell you, Shinobu canonically is close friends with Giyuu?!? (Trash started sentence but idk what else to say…) Canonically, in the character book, Giyuu states that Shinobu speaks to him a lot and admires her hard work and seriousness. He also says her pallor isn't great and Shinobu states that Giyuu should talk more. She Obviously has a sharp tongue (stated as poison tongue in book) and is very quick witted.
Rengoku views her as amazing because of her ability to fight and poison knowledge, Uzui states he finds her a bit flashy and very serious (also stated she has good hips for giving birth), Muichiro says she's like a swallow and has a kind face, Mitsuri claims that she is super cute and super mature even though she is older, Obanai calls her hardworking and patient, Sanemi only talks to her because she is Kanae's sister, and Gyomei says that she's sensitive and pushes herself too hard, also stating that she likes talking to Giyuu.
Shinobu sees Rengoku as a good guy but his conversations don't always make sense, Muichiro as a good kid at heart despite his memory loss, Uzui as a beast, Obanai as a great swordsman, Mitsuri as cute, Gyomei as respectful, and Sanemi as just there.
On the opposite side of the spectrum: Rengoku states that Giyuu speaks so softly that he can't hear him but admires him for his hard work, Uzui saying that he looks like he's always at a funeral and it bugs him, Muichiro as he's just sort of there, Mitsuri stating he's silent and fidgety which is cute, Obanai stating he doesn't like him because he always looks miserable which irks him, Sanemi saying he can't stand him because of how he holds himself aloof, and Gyomei sharing that he is dark and not much of a talker, also saying he DOES enjoy talking to Shinobu though. Giyuu does state that he does in fact like Rengoku because he talks to him, Is envious of how unrestrained Uzui is, Is sad because Obanai is unkind to him, Respects Gyomei and believes he is kind, Calls Sanemi a hothead, Believes that Mitsuri is kind but shows too much skin, and hasn't spoken that much to him.
I believe the fandoms interpretation of Shinobu bullying Giyuu is way too overwhelmed and barely has any true sense of character. The way Giyuu acts is based on his past but then again so is Shinobu's. Her smart witty statements are most heard because of Giyuu protecting Nezuko up on Mt Nagamoto and during the first Hashira trial.
